The olive harvest
The olive harvest is a centuries-old tradition passed down from generation to generation, a symphony of the generosity of nature and human work.
When the olives are adequately ripe, we harvest them with special machines to inhibit contamination of the olives with the soil without damaging the trees. This is to guarantee the best quality of our product.
The olives are then transported to the oil mill, where they will be transformed into the liquid gold that has supported the Martucci family for generations.
Harvesting olives is not simply a task, but a celebration of nature’s gifts and the enduring connection between humanity and the land.

Olive processing
A few hours after the harvest, the olives are already in our oil mill where only our olives are processed with stone grinders, as per tradition.
The steps that the olives follow before becoming Olio Martucci are: washing, milling, malaxing, extraction, separation, decantation, filtration/roughing and packaging.
All our olives are rigorously processed at 25-27 degrees, to preserve their taste and quality.
This type of processing is called “cold pressing” and is the best way to obtain excellent extra virgin olive oil.
